Minty Cauliflower

Minty Cauliflower
Hello Sweeties!! July is BBQ month. The basic quest for all vegetarian food lovers is what's there for us in the BBQ feast!!!!! There is Indian cottage cheese/paneer, roasted veggies corn on the cobs. So to add one more interesting item to your grand BBQ menu,. my sister has this Minty cauliflowers for you.

They can be made on the grill. in the oven or on the stove top. They will surely make you love your cauliflower and  push the good old greasy French fries to the side. 

You will need;
1 whole cauliflower tore into florets, wash and drain
Enough oil to lightly coat the florets
Sea Salt to taste
Mint paste
** Make a fine mint paste with mint,cilantro, cumin, garlic and green chilies

Coat the florets with some grape-seed oil, sprinkle salt and cook in a wok on high heat. The florets cook fast so it should take about 5-7 mins. stir continuously to avoid burning Alternatively you can also roast in a pre-heated oven at 400Degress, till the florets start browning.

 After the florets get cook reduce heat, add the mint paste till all florets get evenly coated. Minty Cauliflower is ready to be served.

Chilli Garlic Cheese Toast



Chilli Garlic Cheese Toast
  Hello Sweeties!!! What do you usually prefer to eat when the weather turns gloomy and sad. We in Ashland prefer a soup and sandwich kind of dinner. 

But making the same kind of sandwiches kind of gets boring and kids always demand  having cheese sticks or pizza. This is a mid way between cheese sticks and pizza as I made it with chili garlic sauce and  garlic powder to bump the garlic flavor.
 
You will need;
Prep Time; 10 mins to mix the dough
1.5 cups whole wheat flour

1/2 cup All Purpose flour
1 tbspn oil

1 Tbspn fast acting dry active Yeast 

1 Tbspn Sugar and 1/2 cup warm water to bloom the yeast
For the sauce;
4 tbspn Store brght Pizza sauce or  Leftover chili garlic sauce from any pizza parlor.
Shredded Cheese as per liking
Garlic powder for dusting--Optional
  
In a bowl, take the dry active yeast, sugar and warm water and mix well. Keep it aside to bloom for 10 minutes. The mixture will be frothy, if the yeast is active. If the yeast is old discard the mixture and get fresh yeast. I always prefer to check the yeast then move on to the dough.

In a mixing bowl, take the flour, add the salt, the activated yeast and and little oil to start the mixing, as you move along making the dough, add the water and knead into a soft,m sticky dough. Cover with oil and the plastic wrap and let it sit in  a warm place for 30-45 mins.
Take the decent size ball of dough and flatten it out into a rectangle, spread the chili garlic sauce, dust with dry garlic power and  sprinkle with cheese.
Chilli Garlic Cheese Toast

Pre-heat oven at 375 Degree F, Bake for 10-12 minutes till the base gets brown and cheese melts. Cut into small squares or strips and enjoy with soup of the day!!!!

HERSHEY'S "PERFECTLY CHOCOLATE" Chocolate Cake--in my Kitchen

HERSHEY'S "PERFECTLY CHOCOLATE" Cake
 Hello Sweeties!!!! Sorry for the long absence, but so many things have happened in the past one month that it seems like a year has gone by in just 30 days.

Family emergencies are not welcome; but cannot be avoided, so just say all went wrong before; then by Gods grace all problems were sorted  with time as medicine. 

Today, I bring to you a very simple cake from Hershey's. This cake at one point scared the wits out of me with Too much liquid and too less flour, but the end result was very much pleasing. 

Thanks to my cousin "S" who shared with me the Hershey's Coffee cake with choc frosting, since kids could not eat that cake, I  was compelled to attempt this cake as a kid friendly version.

I skipped the frosting this time and decorated with simple powdered sugar.
HERSHEY'S "PERFECTLY CHOCOLATE" Cake

























Source

You will need; 
2 cups sugar

1-3/4 cups all-purpose flour

3/4 cup HERSHEY'S Cocoa

1-1/2 teaspoons baking powder

1-1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract
1 cup boiling water

Heat Oven to 350 Degrees F. Grease (2)9Inch pans.

In the bowl of the stand mixer, add the sugar, flour, baling soda. baking powder, salt, eggs and milk. Beat for 2 mins on medium and stir in the  boiling water. Batter will be THIN. Pour the batter in the greased pans.

Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.

Mango Cake with Mango White Choc frosting

Hello Sweeties!!!! Today is Mr. Ash's Birthday!! A grand celebration day was planned by kiddos and we set to work. Daddy's Birthday is special as it usually falls on Memorial day weekend or a day or so after. 

We are still very much in the holiday mood and now that Donut is older, he is eager to help me in planning or baking the cake.

For this year's cake, Donut deiced he wanted something desi yet in a cake. So we settled for Mango milkshake cake. I had stashed some concentrated Alphonso mango pulp from my trip back home in my fridge, so put that to work. The deep yellow color is from the home grown and homemade concentrated mango pulp.

The frosting was also new to me, this is a white chocolate, mango infused frosting. The taste is bit sweeter for our taste buds, but overall I am please with the cake and this recipe is a keeper for the coming summer birthdays.

Recipe source with tweaks from my side

You will need;
1/2 stick butter
1 cup sugar
1 and 1/2 cup flour
1 tspn ENO -Fruit Salt
2 eggs
3/4 cup Milk
2 tbspn Concentrated mango pulp
1 tspn cardamom-elaichi

In a bowl take the milk and mix in the mango pulp. If you cannot find the pulp, use mango juice( tinned or freshly squeezed out of a mango) and mix into a smoothie, add the elaichi and keep aside.

Preheat the oven to 350 degree F.

In the stand mixer bowl, beat the butter and the sugar, add in the eggs and cream the mixture, then add the mango milk, and beat for 2 mins. Slowly add the flour, and stir well. Lastly add the ENO and stir once.

In a well greased bowl, pour the mixture shake the pan and bake at 40-45 mins, till the knife comes out clean.

Frosting
You will need;
2 cups heavy whipping cream
50 pieces of white chocolate wafers
( I use wilton chocolate wafers)
2 tbspn conf sugar
2 tbspn concentrated mango pulp 
1/2 tspn cardamom/elaichi powder

In a bowl, mix in the concentrated pulp with 1/2 cup cream, add the elaichi powder and set aside.

In anr glass bowl, take the chocolate wafers, add in 1/2 cup cream and  melt in a microwave for 30 seconds, stirring once in between at 15 seconds. The melting time will depend on how powerful your microwave is. Use  your judgement and  melt the chocolate wafers.

Whip the rest of the cream with the sugar, and store in the fridge till further use.

In the same mixing bowl, cream the chocolate mixture and the mango pulp mixture, frost the cake with this mixture. Use the stored whipped icing for the borders on the cake.

In the sampling, we realized that the frosting was a tad too sweet for us, so we added some mango cubes on the cake. The mangoes need some time to ripen and are a bit sour, making it perfect for the cake.


Donut prepared this parfait bowl for Mr. Ash for breakfast and Munchkin is making a card for him as well. So Here's wishing Mr. Ash a wonderful Birthday!!!!
For the parfait, Donut chopped some bananas, and added some granola for the crunch, used the leftover icing and topped with a cherry. Easy and filled with so much love for our daddy!!!

Homemade Granola Trail Mix

Hello dearies!!!I have some awesome friends. Some help me by motivating me to keep aiming for my target weight loss some even send me awesome goodies in mail. Some post healthy food and snack options for me. Such an amazing friend is M who has her blog as Cravings. True to it's name, it does satisfy all e-Cravings, as the technology is not there yet where food can transported through the computer screen, I drool and drool looking at some creations. M posted her granola recipe few weeks back and its has been on my mind ever since. Luck by chance I was ordered a days rest from all the computer and TV by the Dr. for an eye infection. I was send home from work. Mr Ash soon killed my excitement of getting a day off and doing nothing but watching some TV and reading some blogs,Also the mean daddy he is, he took away my phone as I can read blogs on my phone too.. Boo hoo. I was left to do nothing but REST. How can anyone do nothing is beyond me, so I bribed Mr. Ash to give me 30 Minutes of some REST time in return of nothing to do. I made M's Granola with my pantry list of things.

 Recipe Source; Cravings


You will need;
3 cups old fashioned rolled oats
1 cup Organic Agave Syrup/Honey can be used
* I used organic blue agave syrup
3 tbspn water
vanilla essence
1/4th cup each of;
 raisins, cranberries, almond , walnut, sunflower seeeds.
(You can pretty much use anything you fancy)





Preheat oven to 350degree, Mix the oats and the nuts, stir once. In a bowl add in the honey/agave syrup, vanilla essence and water and stir, pour it over the oats and nuts mixture,  roast the oats, stirring every 7-10 minutes in between.. I used party aluminum tray, keep roasting in the oven for anr 30 mins, stir as not let it stick and burn, keep doing this every 7-10 mins. remove and cool, your granola is ready. Add in pretzels sticks, M and M's or sugar coated candy when you are ready to pack for hikes, trails or store in air tight jar and use for breakfast every morning.

Garlic Pullapart rolls



 This Mothers day would always be special for me. Number one reason being that my younger munchkin has grown to be a big boy. He demands that no one call him a baby yet he will always be our sweet baby. This year he, brother and his Dad made these rolls for our dinner. They also made soup to go along with it and gave this Mom a much needed break to catch up with other activities and pending projects calling her name. Since we all know by now, Mr. Ash needs some initial help in the kitchen, I kind of made the dough and supervised the work, literally being the BOSS of the house for one day!!! We believe in equal opportunity work, so no one wears the BOSS HAT in Ashland. We all have our assigned chores, yes I am talking about the kids too. I was brought up with the belief that you start young, so cleaning the room, picking up after meals and setting the table, putting away folded laundry in its proper place are some of the chores that my Munchkins are allotted to do. If they are lazy to do it today, the work multiples; still they do it. Simple and easy and works best. So this Mothers Day made me feel good and happy that all the past years that I was judging my capabilities of being a good ma, and making my kids do their own work was really not needed. They will work better if they are used to this when its time for them to fly out this nest and build their own little nests. Their better half's will most certainly Thank Me.
 
 For the dough,

Prep Time; 10 mins to mix the dough
2-3 hours for the dough to rise first time
1 hr approx for second rise

1.5 cups whole wheat flour
1/2 cup All Purpose flour
1 Tbspn dry active Yeast 
1 Tbspn Sugar and 1/2 cup warm water to bloom the yeast

Seasoning

1 Tsp Dried Rosemary
1 Tsp Garlic powder for the dough
+ 1 Tbspn dry garlic powder for dusting
1 Tsp Salt for dusting
2-3 Tbspn Olive Oil and 
water or milk as needed to make the dough

In a bowl, take the dry active yeast, sugar and warm water and mix well. Keep it aside to bloom for 10 minutes. The mixture will be frothy, if the yeast is active. If the yeast is old discard the mixture and get fresh yeast. I always prefer to check the yeast then move on to the dough.

In a mixing bowl, take the flour, add the seasonings, garlic powder, rosemary and little oil to start the mixing, as you move along making the dough, add the oil and knead into a soft dough. Cover with the plastic wrap and let it sit in  a warm place. I preheat the oven to 200 Degree F and then shut it off. Then place the bowl with the dough to rest and rise for a good 2-3 hours. I have never experienced problems with dough rising not enough. When the dough doubles in size, Punch out the air from the dough and take small balls and roll it into small rolls. Arrange them in a ring, spacing them apart and let them poof again till they kind of stick to one another. Brush some milk or water on the rolls, then dust them with dry garlic powder and salt. You can add cheese also on the rolls, But I kind of kept it out.



After they rise and look poofed up, bake them for 10-15 mins in a preheated oven at 350DegreesF.  When they are done, they will change color and the whole house will be smelling of garlic and bread. This is one of the main reason I bake this bread on Sunday, it's a kind of aromatherapy session and make the whole Monday morning seem passable. so Moms and dads what are we waiting for. Bowling Pins Birthday cake- with homemade White Chocolate Fondant

I have been asked to make some cakes by none other than a few 8 year olds. Once they know they can have a theme based cake which not many can have from a grocery store, they have been asking me to come up with  a few cake ideas. This was for my sons best friend who turned 8 years old. They had  a bowling bday party. The kids freaked out at the bowling alley, thanks K for the party, they had a rolling time shooting the pins and at times falling when lifting the heavy balls.
Everything on this cake is edible. I made the track with marbleized effect, bowling balls and pins from modelling white chocolate or white chocolate fondant as it is commonly known. This cake would be special for me, as I learned  a new thing about the modeling chocolate and how great it tastes when compared with Fondant. You will be seeing a lot of models from this magic product on this blog now on. I drew the pins in 2 sizes free hand on paper, then laminated that sheet and then cutting it out, to use as a template for my pins. Hope you all like my efforts for this cake.

I needed to make  a 10 inch cake and about 12 cupcakes, so my prep with the white chocolate fondant looked like this.

There is no recipe as such for the cake, I made from the box, for the lack of time and convenience the boxed mixes offers to me. Whip me for using the boxed mix, but what a lazy girl to do!!

 The icing is whipped cream pudding icing.

** Whipped Cream icing can be made by using simply Heavy Whipping Cream and Conf Sugar,, The Rec is as

Follows..
One Cup heavy Whipping Cream
Half Cup Conf Sugar
**One packet Instant pudding mix. OR
IF desired One Packet Unflavored Gelatin dissolved in water.

Take a bigger bowl and keep some ice cubes in that.. Over the cubes place anr bowl. Take one cup cream and add sugar and Pudding mix( if needed )... and beat with electric mixer for about 5-7 mins on medium till soft peaks are on the blade. The icing is ready.



Since I cannot stop at just one, I added the dozen cupcakes with the pins as cupcake toppers. The kids loved the pins and before the cake they pins were gobbled by  a bunch of 8 year olds, requesting 2 pins be added to the cake next time onwards.

Doll Cake


I made this cake for a friends one year old's birthday. I had made a doll cake before, so I had the basic idea of how the cake needs to be done, but wanted this to be one of my best works, so put in the extra work of making the dress. As usual. I used the starburst candy to make the halter dress, but the dress stuck to the doll and it looked like a glam doll, so made the stole with the handmade rose broach. Now my doll was more fit for a one year's birthday.

For the crowd I use the boxed cake mix, as it never fails and cuts the work in half. I added mango puree instead of water to add in the Mango Flavor. The icing is whipped cream pudding icing.

I had no clue of making any hairstyles, I guess having short hair has made me incompetent of making any hairstyles, and having 2 boys does no help in this department, yet I tried and it looked okay.



The skirt was the most that made me happy. I wanted to perfect the rosettes and it was on my mind long enough to put them on the cake, and my friend gave me the opportunity. She gave me absolutely no conditions or terms of how she wanted the cake to be, all she said was make a doll cake as and like your wish. I am very thankful to her for this opportunity, and would love making cakes for her doll as many times as I can.
One last look at the doll. I apologize for the final picture. But it was only in the evening that I was able to take the picture of the doll cake all assembled and ready to shine at the party. Hope you all also appreciate my efforts.

Whole Wheat Chutney Pizza


Who does not love Pizza. It has become the universal food, you can go to any corner of the earth and you will find Pizza. The toppings and seasonings are widely changed and localized, but some form of pizzjhaa( Yes that's what we called when we were young and relatively new to pizza) is always found. Pizza was introduced to the Indian counterparts somewhere in the 1987-1990. Believe it or not there were no Pizza-huts or domino's churning out the pizzas but local restaurants mostly south Indian Udipi owned were making them in their unique style. Monginis bakers were the local bakeries in Mumbai, where we all went to when we had birthdays and got our cake, sometimes if we got lucky a puff pattice to satisfy the bottomless pit we called tummy. Monginis always had the pizza bases and they sold it in packs of 4. Perfect for pan size pizzas, only if we had the know how... The local udipi guy always knew hoe to make the pizza we had..so we just went in and ordered the fix.. the sauce was regular ketchup, and he would have beat us if we dared says pizza had different sauce. he slathered the ketchup on the base, had cut discs of capsicum, tomato and onions and the good old Amul cheese grated and baked till cheese melts. My mom tried the same version many a times, somehow the outside pizza by that udipi chef was always cherished in our little minds.

The way he makes the pizzajah is same till recently, when I went to Mumbai and my mom promised my kids the pizzajah their mom loved. TO her horror my kids refused to call it a pizza, then even refused that it belonged to any pizza family. Finally, she gave in and took them to the nearest Dominos and treated them to  a cheese pizza the one they are familiar with. She even remarked that she got lucky with us as we ate the good old pizzajah that cost her Rs, 60 instead of the Domino pizza she spend double the amount on. 

We now have regular pizza parties at home in US. MY son and his friends who love their pizza enjoy making their own pizzas and eating them. At times their mom say they eat the veggies that they do not at their homes, just coz it's on the pizza they made themselves. My Indian twist to the regular American pizza is spreading my green chutney on it. The chutney gives a different twist and tang to the whole pizza and it does taste superb.


For the dough,

Prep Time; 10 mins to mix the dough
2-3 hours for the dough to rise
10-12 mins for first bake 
Makes 2 Thin crust Pan pizzas and 1 Thin crust medium  pizza.

2 cups whole wheat flour

1 Tsp Garlic powder

 1 Tsp red Chili Flakes
2-3 Tbspn Olive Oil and 
Salt for taste
water as needed to make the dough

In a bowl, take the dry active yeast, sugar and warm water and mix well. Keep it aside to bloom for 10 minutes. The mixture will be frothy, if the yeast is active. If the yeast is old discard the mixture and get fresh yeast. I always prefer to check the yeast then move on to the dough.

Once the base is baked, spread the chutney on it, then spread the pizza sauce(I use the store brought kind), then add the toppings of your choice.


We like red and green peppers, broccoli, onions and at times even pineapple. Spread mozerralla cheese as much or as little as you want and bake at 350 degrees for another 10-12 minutes, till the cheese melts. You can steam the broccoli for 3-4 minutes, it tastes great.



Enjoy the home made pizzas and cherish the memories with your kids. Today is Women's Day, so this is my gift to all the busy, idle, working or home making women. We Rock!!!!

Happy Valentines Day- Celebrating with some Starburst candy roses


Happy Valentines Day to you all my dearest friends. I am cutting things short and going ahead with what my munchkins planned for me. I woke up to these beautiful 3 roses, one from each of my boy and I in turn surprised them with my banana almond cake. There were demands to keep the frosting out this time, so I dusted the cake with confectioners sugar and colored sugar and thought it would make the cut. But Mr. Ash felt that the cake was not appropriate for V day. I was stuck with no fondant on hand and a very tiring day at work, to make the whole icing for just decoration. The lazy unromantic me, was plain lazy to go shopping for ready made icing, also that it is not loved by them, I only needed to make roses. So I put my brain to work, something I could probably have on hand at home and use to make the roses. I raided my kids V day loot and found snickers, Hershey's kisses, lollipops and fruit roll ups. I tried fruit roll roses like we would make ribbon roses a school project from my childhood, which mainly my mom completed for me. Yes, I was that kid, whose art and craft projects their moms or aunts or anyone other than they did.

I also had some starburst candy on hand. They are so helpful. I could only find a couple of pink and one red in the whole pack. One in hand is worth two in bush, comes true in such situations. I simply zapped the candy in a glass dish for 7-10 secs in microwave, kneaded it into a small ball and rolled it flat out and cut ribbons on that and made roses and inserted them on the cake...how easy can it get....there you have the secret to the roses that not only looked cute but amazed Mr. Ash. He commented that he liked this new fondant roses better than the one I made before.

The real roses were so pretty, that I  cannot help showing them to you. Enjoy the natural beauty and appreciate the blessings however small they may be.

Custard Cookies


Inspiration; Cooking Unbound

My Laptop was feeling a bit unwell since December 25th. So we had to admit him to a repair center for a good 3 weeks. I do not know what was more difficult, surviving without a laptop or calls from the repair center and customer service. The way they acted is and was without our imaginative beings. The first and foremost thing was that there is nothing wrong from our side and the entire fault is with you people. I mean a Laptop which is barely 9 months old, and the display is gone, is my fault. Then I call them for servicing (because we paid for Warranty) on a Holiday is also my fault. Thanks HP for this kind of Customer service.

Coming back, I Finally have my laptop up and running and I could save few pictures makes my day. We made these cookies when we were invited for  a play-date making Gingerbread houses at my Best Friend V's House. I wanted to make something different than the old Chocolate chip cookies and that's when I came across the Cooking Unbound blog. OMG, Kristi is super talented girl, and It was my pleasure dedicating these cookies to her cookies. She used Brach's candy but it was a little more candy then I allow my kids to have at one time. I know my little doughnut is a cookie monster and he never ever stops at one. When I saw her post, I had some custard cookie dough freezing and thought of getting some colored candy to melt, but the day got better of me at work, and I remembered it only when I was ready to bake the cookies. I had forgotten to get the colored candy, So I switched plans. Could not afford the disappointed look on my munchkins faces, I made them crush the lolllipops that we had saved up from Dr.'s Visits and haircuts in the mall.. These cookies will be on our holiday baking now on, as we all enjoyed the  chatter and the banter while making these cookies.

You will need;
1.5 cups-All Purpose Flour -
1/2 cup Custard Powder -  I used the one I had from the Indian store.
1stick Butter  I used 1/2 cup oil and addntl milk to wet the dough.
1 cup Sugar
Milk-As needed

Crushed lollipop Candy- In red, green and purple ( get dark colored candy as light colour would be lighter after baking)

Cream the oil and sugar till sugar melts, then add the custard powder and flour, then as needed add milk, to form a soft dough, chill for 30 mins and roll out cookies.

**( If you want to skip oil use jello custard cups and add milk if needed-- This I have never tried, but unless you try, you never know, so next batch I bake these cookies, I will try this)

Once you roll out the cookies, use  the back of the icing nozzle and make holes in the cookie. Fill the holes with Crushed candy and bake for 9-10 mins in a preheated oven at 300 degree F.


How Cute is this??? Can it get any cuter? How about a tree with ornaments that you can see through..
The kids had  a blast eating these cookies and I enjoyed baking them with my munchkins.
