Eggless Beetroot Cake

Eggless Beetroot Cake

Hello Sweeties!!! If you are wondering if you read the header correct, do not worry!! This is indeed a beetroot cake, but you can bet my last penny, no one can tell and hence, no one needs to know.


If I try and make my kids eat beets in traditional ways, I am inviting a huge fight with lots of tears( mine off-course) and lots of beets being cooked that I will eat over a period of time.



My kids love the date nutella cake all the time, they still don't know there is date in that cake, likewise they ate this cake never suspecting the beets in the cake. Munchkin even said I made the best red velvet cake.


You will need;
1 Cup Beetroot Pulp
* boil beetroot with 1/2 cup water in a pressure cooker and once cool, grind it into a pulp 
1 Cup Sugar
1/2  Cup Oil
1 Cup Whole Wheat Flour
1/2 cup Organic All Purpose Flour
2 Tbspn cocoa powder
1 tspn ENO-(Fruit Salt)
In a bowl , mix the beet pulp, sugar, cocoa powder and oil, and whisk well till sugar melts.Then add the flour  one big spoon at a time. Keep whisking it till all the flour and the wet mix gets incorporated, and lastly ENO. Stir the batter lightly.

In a well greased loaf pan, pour the mix and bake in a pre-heated oven @ 350.. for about 35-40 mins or till the knife comes out clean.

Hello Sweetpeas!!! This post is a thank you to all my dear readers and well wishers. This recipe is a gift for each and every one of you on the occasion of 400th post on indulge. 

I am as surprised as you are as we continue our journey through 400 recipes and 6 years. I wish for us to keep cooking and learning new recipes in future too.

As you might have noticed, I have changed my diet and started going Organic where I can afford and it does not rip my monthly budget,  also started baking eggless since some time. This is my old tried and tested nutella date cake minus the nutella and dates. 

I have been reading many controversial reviews about how bad nutella is; so instead of trashing the whole idea of not ever using my favorite nutella, I mixed in the dark cocoa powder with almond butter and almond milk. My New instant nutella with almonds was born. I might not buy a bottle again!!! Anyways, back to where I meant to be;

You will need;
3/4th cup Organic Almond milk
3 tbspn Organic Almond butter
Raw Sugar- 1 Cup
Oil- 1/2 Half Cup
4tsp Dark Cocoa powder
1 Cup Whole Wheat Flour
1 Cup Maida/Organic  All Purpose Flour
Vanilla-1tsp
1 tspn ENO-(Fruit Salt)

Make  a paste of sugar and oil, stir well till sugar dissolves. Raw sugar takes some time to dissolve. Then add in the almond milk, almond butter and dark cocoa powder. Mix well. 

Then add the flour  one big spoon at a time.. keep whisking it till all the flour and the wet mix gets incorporated....lastly add ENO. Stir gently.

In a well greased pan, pour the mix and bake in a pre-heated oven @ 350F.. for about 35-40 mins or till the knife comes out clean. I used my favorite rose muffin mould. 

There is something happy about roses for me. Enjoy the cake and don't forget to come back for some more easy recipes.

 Hello Sweeties!!!  I had made mawa/Dry Milk Khoya a few days back, Since then I am hooked on to making Indian sweets and Mithais at home.

I make date cake often using Aayis Recipes Recipe. This time I tried using my homemade mawa and it worked great. Thanks Shilpa for this great recipe. I have added many different fruits and ingredients and made this eggless cake. I keep the liquid and dry ratios constant and change the wet ingredients and it has worked every single time. So Thanks again.

You will need;
1 Cup Mawa/Khoya mixed in  3/4 cup  almond milk
1 Cup Sugar
1/2  Cup Oil
1 Cup Whole Wheat Flour
1 Tspn Cardamom Powder
1 tspn ENO-(Fruit Salt)
 
In a bowl , mix the khoya mixed in almond milk, sugar, cardamom powder and oil, and whisk well till sugar melts.Then add the flour  one big spoon at a time.. keep whisking it till all the flour and the wet mix gets incorporated, and lastly ENO...


In a well greased pan, pour the mix and bake in a pre-heated oven @ 350.. for about 35-40 mins or till the knife comes out clean.

Hello Dearies!!!! Fathers day is just as special as Mothers day. They are probably the best mothers  and they do just as much as moms do for kids. They are truly the unsung heroes who should be receiving as much appreciation as Moms do.

Our daddy likes Mango a lot and anything with mango is his favorite for the day.  This cake is very simple and easy. I make date cake often using Aayis Recipes Recipe. This time I tried using mango pulp and it worked great.

You will need;
1 Cup Mango pulp mixed in  1/2 cup milk
1 Cup Sugar
1/2  Cup Oil
1 Cup Whole Wheat Flour

In a well greased pan, pour the mix and bake in a pre-heated oven @ 350.. for about 35-40 mins or till the knife comes out clean.
My latest addiction to Pintrest resulted in yet another cake with word Dad baked right in the cake. I had some Date cake and with cookie cutters I  cut the words Dad and arranged them on a mini loaf pan, over this I poured the mango cake batter and baked it like a regular cake.

Hello Sweeties!!! Today is a cake that will please you all candy crush game lovers. This can be made interactive before cutting.

Frosting is Marshmallow Fondant 
 
All the candies and the candy bomb is handmade. It did take little more effort than my other cakes, but the joy it brought on my family's faces redeemed it all.

I did not have any homemade buttercream icing to stick the fondant sheet on, so used some store brought choc icing for the fondant to stick to the cake.

Hope you all will love the cake as much as my family loved cutting into it.

Hello Sweeties!!!! Distance makes the hearts grow fonder!! so they keep telling us. I have been missing since some time, hopefully you missed me. Today, I am back after a short break with a lip smacking recipe for fondant.

We never liked fondant for its tastes, but things you can do with the rolled ball of sugar makes me using it more often than I intend to.

The store brought fondant is good for use, but the costs keeps me away from it. I am frugal in ways, I mean if you are not going to eat it, use for short while and ultimately throw it away, why spend tons for the looks.

Making my own fondant was on my mind since long. I ultimately landed on this recipe and its  a keeper for sure. I am daring to make a candy crush cake based on the game app that is currently having everyone hooked on it.

I would be making this cake for Mr. Ash. Not because he plays this game, but only because his birthday is coming up before mine. Do let me know how far or close I am getting to the candies; shapes and colors.

  Hello Sweeties!!! Today is a bright two tone icing cake. The process is so easy and yet looks like you took so much effort to create.

Whipped Cream Choc Frosting

All you need to do is prepare two icing bags with two colors and fit them into one bag with the 1M Wilton Rosette nozzle and bingo, pipe your rosettes like you do every time.

I used my trusted whipped cream custard icing and Choc frosting recipes and made this cake as an Easter gift for my dear friend.

Hershey Choc Cake tweake d as Nutella Banana Cake--Eggless and Ohh so Goodddd

Hello Dearies!!!! Today, I bring to you a very simple cake from Hershey's. I tried their Purfect Choclate cake before, so this recipe is not one that I am scared of trying now, although for the first time this cake at one point scared the wits out of me with Too much liquid and too less flour, but the end result was very much pleasing. 

So this time around, when I had to make an eggfree version and had over ripe bananas that were calling out to me, I decided to tweak the basic recipe and make this eggless version.

You will need;
2 cups sugar

1-3/4 cups all-purpose flour

1/4cup HERSHEY'S Cocoa

1-1/2 teaspoons baking powder

1-1/2 teaspoons baking soda

1 teaspoon salt

2 very ripe bananas

1 cup milk mixed with 2 tbspn Nutella

1/2 cup vegetable oil

2 teaspoons vanilla extract
1 cup boiling water

Heat Oven to 350 Degrees F. Grease (2)9Inch pans.

In the bowl of the stand mixer, add the sugar, flour, cocoa, baking soda. baking powder, salt, mashed bananas and milk. Beat for 2 mins on medium and stir in the  boiling water. Batter will be THIN. Pour the batter in the greased pans.

Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.


This cake is very moist and very very addictive, so use caution when you make this. This cake has made it to an all time favorite list in Ashland.

Choclate Whipped Cream frosting

Hello Sweeties!!!! Today is a good day. I bring to you something sweet, something chocolate and something Purrfectt together.

 I recently made this cake for my sweet cousin and he absolutely loved the cake. So on popular demand the whipped chocolate icing has to be posted on this space.

Cake recipe-- Try my perfectly Chocolate cake

Chocolate whipped Cream icing;
You will need;
The icing is whipped cream pudding icing.
** Whipped Cream icing can be made by using simply Heavy Whipping Cream and Conf Sugar,, The Rec is as
Follows..
  1 Cup heavy Whipping Cream
  1/2 Cup Conf Sugar
3 Tbspn Hershey Unsweetened cocoa powder
 **1 packet Instant pudding mix-- Optional
 
Take a bigger bowl and keep some ice cubes in that.. Over the cubes place anr bowl. Take one cup cream and add sugar, cocoa powder and Pudding mix( if needed )... and beat with electric mixer on medium till soft peaks are on the blade. The icing is ready. 
 
The cake recipe makes 2-9inch cakes. The Frosting recipe is for 1 small oval cake shown in the pic. Double the recipe if you have 9inch or bigger cakes.

 Hello Sweeties!!!! Sorry for the long absence, but so many things have happened in the past one month that it seems like a year has gone by in just 30 days.

Family emergencies are not welcome; but cannot be avoided, so just say all went wrong before; then by Gods grace all problems were sorted  with time as medicine. 

Today, I bring to you a very simple cake from Hershey's. This cake at one point scared the wits out of me with Too much liquid and too less flour, but the end result was very much pleasing. 

Thanks to my cousin "S" who shared with me the Hershey's Coffee cake with choc frosting, since kids could not eat that cake, I  was compelled to attempt this cake as a kid friendly version.

I skipped the frosting this time and decorated with simple powdered sugar.
HERSHEY'S "PERFECTLY CHOCOLATE" Cake

You will need;

Eggless Nutella Date Cake-- We turn 5!! HBD!!!!







Hello Sweeties!!!! Today is a big day for IndulgeAshscorner. We turn 5 today. Wow.. time just flies. 5 years and approx 340 recipes, I am still going on. Keep us in your prayers to help bringing you many more recipes.

This is the time when I want to thank all my well wishers, readers, family and friends who have been the spine behind Indulge. Their time, efforts and constant words of encouragement is what is adding fuel to my passion of blogging.
Celebrations are incomplete without some cake. This is a very dense and rich cake with goodness of Dates, Nutella and  just to make up the guilt, wheat flour. So its healthy, eggless and tastes good; what else would you need in a cake.. right!!!!

You will need;
18 dates soaked in 3/4th cup Warm milk
3 tbspn Nutella  mixed in 3/4 cup Warm milk
Sugar- 1 Cup
Oil- 1/3rd Cup
1 Cup Whole Wheat Flour
1/2 Cup Maida/ All Purpose Flour
Vanilla-1tsp
Walnuts- 2Tbspn
1 tspn ENO-(Fruit Salt)
Make  a paste of sugar and the soaked Dates, Nutella mixed warm milk in a food processor/grinder....to this paste add the oil, vanilla, and mix well... then add the flour  one big spoon at a time.. keep whisking it till all the flour and the wet mix gets incorporated....then add nuts and lastly ENO...

In a well greased pan, pour the mix and bake in a pre-heated oven @ 350.. for about 35-40 mins or till the knife comes out clean.

Hello Sweeties!!!!I am lagging behind in posting, but new year started on a rough patch health wise. It is getting back on track so hoping now on, I don't disappoint you all.

Today I bring to you a very simple yet rich cake. This cake I made  a couple of times since the year started and it gets vanished  before I can find a box to store it. Make it to believe it.

You will need;
1 1/2 cups All Purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 cup sugar
1 1/2 teaspoons pure vanilla extract
1/2 cup oil (vegetable, canola or extra light olive oil)
1/2 cup buttermilk 

1 Tbspn Cardamom Powder
1 cup Tuti Fruiti and walnuts dusted with all purpose flour
1/2 tspn Salt
 

Preheat oven to 350*F. In a medium bowl, add flour, baking powder, baking soda and salt. Stir together with whisk, and set aside. In the bowl of an electric mixer, add eggs and beat 10-20 seconds. Add sugar and continue to beat on medium speed about 30 seconds. Add vanilla and oil, beat. 
 
Reduce mixer speed to low and slowly add about half of the flour mixture. Add half of the buttermilk, then the rest of the flour and the rest of the buttermilk. Beat until just combined. Scrap down the side of the bowl. Fold in the flour dusted nuts and tuti fruit and fold.
 
Grease a cake pan with some oil and dust the flour or line a parchment paper. Pour the cake batter in the well greased pan and bake in a pre-heated oven for 35-40 minutes.

 Once cool cut into slices and its ready to eat. The cake develops overnight, so if you can wait; wait for a day or so to indulge.

Minion Rush!!!! Ba-Ba-Bananna!!!!!

Hello Sweeties!!! Today is a big day in Ashland. Donut celebrates his first double digit birthday! I am happy and sad at the same time. Ever felt this mixed emotion? I am happy that he is growing into a fine boy, sad as he is not longer my baby.

He is not into parties with cake cutting and the whole nine yards associated with birthday parties for kids. He wants a time out of home with 3-4 boys/classmates, wow.. what did I do to expedite his growth?

 I for one was all for big birthdays  cake cutting and gifts. However its not my birthday,  so he will call the shots now on in Ashland.

Despicable Me is huge hit in our home currently.  Kids playing minion rush on iPad, talking, singing like Minions, you name it and they do it. Left with little to zero choice, here goes my attempt in making Donut's favorite character Dave.

I baked 2-- 6 inch cakes and  trimmed the tops on one cake. The Minion Suspenders and eyes and everything fondant is hand made and cut from rolled fondant. Excuse the shabby and messy job.

There is no recipe as such to share today, the cakes and icing is discussed at much length. I used store brought fondant and made my whipped cream icing. I know wrong choice as the icing is loose and the fondant is bleeding color. But I promise to re-do this cake and do  a better job.

A very hungry Caterpillar!!! Story Book Inspired cupcake

  Hello Sweeties!!!!! Recently I made this story book inspired cake for my sweetest nephew. He is just short of turning the big 1. So we thought what better than this lovely story.

The cake is  chocolate cake and icing is regular whipped cream icing. For green I used colored sugar and the legs and antenna are melted tootsie rolls. The nose and lips are M & M candies.

 The icing is whipped cream pudding icing.
** Whipped Cream icing can be made by using simply Heavy Whipping Cream and Conf Sugar,, The Rec is as
Follows..
One Cup heavy Whipping Cream
Half Cup Conf Sugar
**One packet Instant pudding mix. OR
IF desired One Packet Unflavored Gelatin dissolved in water.

Take a bigger bowl and keep some ice cubes in that.. Over the cubes place anr bowl. Take one cup cream and add sugar and Pudding mix( if needed )... and beat with electric mixer for about 5-7 mins on medium till soft peaks are on the blade. The icing is ready. 
















So what do you think of my efforts. Did this caterpillar over stuff itself and fly into a butterfly!!!

Henna Art Cake

Hello Sweeties!!! Ms. Ash celebrated her birthday and also her wedding anniversary last week. To mark both these occasions, we went for a Japanese Hibachi Dinner and then dessert at home.

 I had attempted an henna tatto cake last year. Indian weddings and Henna is a hand in glove combo. No wedding theme can be complete without henna playing an important role.


This is a Simple Vanilla Cake from the boxed mix with  homemade strawberry jelly filling, frosted with chocolate ganache and Henna art piped with mango infused whipped cream and white choc frosting.

Chocolate Ganache
**I did not use any alcohol in my Frosting.

Bake the cake as per the package directions and cool to be frosted. Slit the cake and  tort the levels, cover with the strawberry jam filing. and cover with the ganache. Cool and store in fridge for later use.

Mango Frosting
You will need; 1 cup heavy whipping cream 15 pieces of white chocolate wafers ( I use wilton chocolate wafers) 1 tbspn conf sugar 1/2 tbspn concentrated mango pulp  1/2 tspn cardamom/elaichi powder
In a bowl, mix in the concentrated pulp with 1/4 cup cream, add the elaichi powder and set aside.
In anr glass bowl, take the chocolate wafers, add in leftover cup cream and  melt in a microwave for 30 seconds, stirring once in between at 15 seconds. The melting time will depend on how powerful your microwave is. Use  your judgement and  melt the chocolate wafers.
In the same mixing bowl, cream the chocolate mixture and the mango pulp mixture, Pipe the henna art on the ganache frosted cake.

Mango Cake with Mango White Choc frosting

Hello Sweeties!!!! Today is Mr. Ash's Birthday!! A grand celebration day was planned by kiddos and we set to work. Daddy's Birthday is special as it usually falls on Memorial day weekend or a day or so after. 

We are still very much in the holiday mood and now that Donut is older, he is eager to help me in planning or baking the cake.

For this year's cake, Donut deiced he wanted something desi yet in a cake. So we settled for Mango milkshake cake. I had stashed some concentrated Alphonso mango pulp from my trip back home in my fridge, so put that to work. The deep yellow color is from the home grown and homemade concentrated mango pulp.

The frosting was also new to me, this is a white chocolate, mango infused frosting. The taste is bit sweeter for our taste buds, but overall I am please with the cake and this recipe is a keeper for the coming summer birthdays.

Recipe source with tweaks from my side

You will need;
1/2 stick butter
1 cup sugar
1 and 1/2 cup flour
1 tspn ENO -Fruit Salt
2 eggs
3/4 cup Milk
2 tbspn Concentrated mango pulp
1 tspn cardamom-elaichi

In a bowl take the milk and mix in the mango pulp. If you cannot find the pulp, use mango juice( tinned or freshly squeezed out of a mango) and mix into a smoothie, add the elaichi and keep aside.

Preheat the oven to 350 degree F.

In the stand mixer bowl, beat the butter and the sugar, add in the eggs and cream the mixture, then add the mango milk, and beat for 2 mins. Slowly add the flour, and stir well. Lastly add the ENO and stir once.

In a well greased bowl, pour the mixture shake the pan and bake at 40-45 mins, till the knife comes out clean.

Frosting
You will need;
2 cups heavy whipping cream
50 pieces of white chocolate wafers
( I use wilton chocolate wafers)
2 tbspn conf sugar
2 tbspn concentrated mango pulp 
1/2 tspn cardamom/elaichi powder

In a bowl, mix in the concentrated pulp with 1/2 cup cream, add the elaichi powder and set aside.

In anr glass bowl, take the chocolate wafers, add in 1/2 cup cream and  melt in a microwave for 30 seconds, stirring once in between at 15 seconds. The melting time will depend on how powerful your microwave is. Use  your judgement and  melt the chocolate wafers.

Whip the rest of the cream with the sugar, and store in the fridge till further use.

In the same mixing bowl, cream the chocolate mixture and the mango pulp mixture, frost the cake with this mixture. Use the stored whipped icing for the borders on the cake.

In the sampling, we realized that the frosting was a tad too sweet for us, so we added some mango cubes on the cake. The mangoes need some time to ripen and are a bit sour, making it perfect for the cake.


Donut prepared this parfait bowl for Mr. Ash for breakfast and Munchkin is making a card for him as well. So Here's wishing Mr. Ash a wonderful Birthday!!!!
For the parfait, Donut chopped some bananas, and added some granola for the crunch, used the leftover icing and topped with a cherry. Easy and filled with so much love for our daddy!!!
